Today’s recipe is my delicious GUILT FREE skinny banana bread! This recipe is easy and a great way to use up some spotty brown bananas!

For this recipe you will need:
1-1/3 c mashed banana (the more ripe the better)
1 banana sliced in half long ways
1 large egg
1 tbsp pure vanilla extract
3 tbsp brown sugar
2 tbsp granulated sugar
2 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1-1/2 c all-purpose flour (whole wheat or white works well)
2 tbsp melted butter or vegetable oil
1 tbsp chocolate chips
For vegan version- substitute egg with flax egg and use vegan chocolate chips

How to make it:
1. Preheat oven to 350° F (176° C)
2. Line a bread pan (9x5”) with parchment paper and spray lightly with cooking spray
3. Mash up 1-1/3 cup of bananas and add to a large mixing bowl
4. With the mashed bananas, mix in egg, vanilla, brown sugar, granulated sugar, and cinnamon
5. In a separate mixing bowl mix together flour, baking powder, baking soda, and salt. Stir into bowl of wet ingredients.
6. Stir in melted butter or vegetable oil
7. Pour batter into pan and top with sliced banana and chocolate chips
8. Bake for 45 mins (or until a toothpick can be inserted into the middle and comes out clean)
9. Allow to cool in pan for 5 mins and move to wire rack to cool for an additional 10 mins
10. Cut into 12 slices
11. ENJOY!!

I recommend topping it with butter or peanut butter, however it is amazing plain as well!
