Recipe: chicken and mushroom bhaji✨

•Ingredients:
250g chestnut mushrooms, quartered
150g chicken
1/4 white onion, chopped
1tbsp tomato puree
5tbsp chopped tomatoes
1 garlic clove, crushed
1tsp ground cumin
1tsp ground coriander
1tsp ground turmeric
Small piece of ginger, grated
Small bunch of coriander

•Method:
1️⃣ Over a medium to high heat, heat oil and fry the chicken for 8-10 minutes until all white, put to one side. Fry the mushrooms for the same amount of time then put to the side aswell.
2️⃣ On a low heat, add more oil and fry the onion until transparent and soft. Then add the ginger, garlic and chopped coriander stalks and cook for 2 minutes.
3️⃣ Add the 3 spices, (cumin, turmeric, coriander) tomato puree and chopped tomatoes and cook for 2 minutes.
4️⃣ Pour in 100ml of water, tip in the mushrooms and chicken then simmer for 10 minutes.
